Do you like eggplants also known as aubergines? They not only taste delicious, but also are high in fibre and contain nutrients with antioxidant properties making them very effective against aging, cancer and inflammation. These veggies are full of B vitamins essential for our body’s metabolism. Sounds good, doesn’t it 😉
There are so many ways you can enjoy these vegetables. Yesterday I used them for a cold spread. You could also add the backed aubergines (see step 3) to another dish, maybe a stir-fry with onions, tomatoes, and chickpeas to get a delicious and warm meal.
All you need for this recipe:
- 2 medium sized aubergines
- 1 tbsp lemon juice
- 1 clove of fresh garlic
- 1-2 tbsp virgin olive oil
- pinch of salt and pepper (or chili powder)
